  1. 2.5 cups basmati rice, soaked
  2. 2 cups soaked chana dal
  3. two and a half cups fresh curd
  4. 3-4 green cardamoms
  5. 2 pieces cinnamon
  6. 3-4 cloves
  7. 2 tsp oil
  8. one teaspoon whole black pepper
  9. salt to taste
  10. 2 large cardamom
  11. one spoon shah jeera
  12. 2 tsp green chillies, chopped
  13. 8-10 mint leaves
  14. one teaspoon turmeric powder
  15. 1 teaspoon red chili powder
  16. 2 tsp desi ghee
  17. one onion, chopped

Kabuli Biryani way

  • Heat oil in a pan on the gas and fry the onions till golden brown and keep aside.
  • Boil 6 cups of water in a vessel, add 2 small cardamoms, cinnamon, cloves, oil and salt on medium heat.
  • Then add soaked rice to it and cook for 5-6 minutes after it comes to a boil. After this, strain the rice through a sieve, taking care that the rice is not cooked completely. Let the water remain in the vessel and do not turn off the gas.
  • Now boil chana dal in this water as well. Boil it till the dal is almost cooked.
  • Now put ghee in a pan and keep it on the gas to heat.
  • Then add black pepper, small and big cardamom, mint leaves, turmeric powder, cumin and green and red chillies and fry it.
  • When it becomes light golden, then add salt, little water and curd to it and cook for 2-3 minutes.
  • Then add chana dal in the pan and cook till the gravy becomes thick.
  • Then spread boiled rice on it and cook for about 15 minutes.
  • Take Kabuli Biryani is ready.
  • Serve it garnished with fried onions and mint leaves.
